Blueberry Waffle Recipe - Made from Sourdough Discard!
Instructions:
1. In a mixing bowl, combine the sourdough discard starter, sugar, kefir or buttermilk, whole egg, and baking soda. Mix until well combined.
2. If the batter appears too runny, add 1-2 tablespoons of flour and mix until incorporated. Let the batter rest for 20 minutes.
3. Meanwhile, preheat a cast iron waffle maker.
4. Pour half of the batter into the waffle maker. Sprinkle blueberries over the batter, then pour the remaining batter over the berries.
5. Close the waffle maker and cook for about 7-8 minutes or until the waffle is a beautiful golden brown color.
6. Garnish with whipped cream or your topping of choice, and enjoy your delicious sourdough discard breakfast waffle!
